Aiza, that’s a great question! It usually depends on what ingredients are used in those recipes, especially if there are acidic ingredients present or not. I say this because baking soda and baking powder are not the same– they both react differently to certain ingredients. There are a number of reasons for using one over the other, or a combination of the two. Sometimes one is chosen over the other for flavor or even for visual purposes– recipes made with baking soda result in a darker product, while those with baking powder will result in a product that is lighter in color. Using a combination means you kinda get something in between. But that’s done whilst keeping in mind the combination of ingredients used. As there are so many waffle recipes on the internet, I can only speak for mine. It’s about finding a perfect balance of ingredients and and using the right techniques; this recipe is great and just works.

Belgian and American waffles differ in size and thickness, which means you can’t use one waffle iron to make both kinds. Belgian waffles are taller—1 to 1½ inches thick—and have deeper wells than their thinner American cousins. Traditionally, they’re also made with a different batter. As Kathleen Purvis writes in the Seattle Times, “Most Belgian waffle recipes are yeast-based, to get that crispy texture.” But you can certainly put yeast-raised batter in a regular waffle maker (as we did in our tests). Likewise, you can put regular old Bisquick, baking-powder-leavened batter, or even pancake batter in a Belgian-style waffle maker. The resulting waffles will just have a different texture and flavor than those made with yeasted Belgian-waffle batter. Any kind can be crispy, depending, as Maichel told us, on the recipe you use and how hot the waffle maker gets: “The more oil [or fat] in your recipe, the higher the temperature you cook it at, the crispier your waffle will be.”
The important qualities of a waffle maker are pretty much the same, though, no matter which type of waffles it makes. Each year the course is different. This past year’s was not the longest but it was the most dirty yet at 133-miles; 46 of which were in dirt, with 12,000 feet of elevation gain. What we liked: The Cuisinart waffle maker was the hottest of all the irons we tested, making waffles in just over three minutes. The waffles it produced were light and fluffy on the inside, with a delicate and crisp crust. They had deep divots for holding lots of syrup and butter, and a traditional round shape. Because the iron gets so hot, the adjustable temperature is actually a useful feature, unlike on most of the other waffle irons we tested.

Modern waffle iron makers offer a large variety of choices. Some waffle irons can make a very thin waffle, capable of making waffle cones or Pizzelle. While there is no set standard of classification for waffle shapes or thicknesses, models that fall within the most common shapes and thicknesses are often labeled as "traditional" or "classic". Models that make thicker and/or larger pocketed waffles are often labeled as "Belgian" waffle makers. I really would like to give this place better reviews,  but the service is SO BAD. I came twice, once during lunch and again during breakfast (but early, so it wasn't even crowded). Both times I sat outside, and both times the service was inexcusably bad. At breakfast, my husband never got a refill on his coffee. Both times I sat for so long that I wasn't sure if I was supposed to get up to place my order at the counter (I wasn't).
Mixing is a critical step in batter preparation since overmixing causes the gluten to develop excessively and create a batter with too high of a viscosity that is difficult to pour and does not expand easily. A thick batter that is difficult spreading in the baking iron has an increased water activity of around 0.85. The increased viscosity made it harder for water to evaporate from the waffle causing an increase in water activity. The control waffles with a softer texture had a water activity of 0.74 after cooking. The Aw is less because the softer texture allows the water to evaporate. With an increased storage time, waffle physical and textural properties changes regardless of the batter viscosity.[93] Aged waffles shrink because air bubbles leak out and the structure starts to condense. Hardness and viscosity also increases as time goes by. Aged waffle samples displayed a starch retrogradation peak that increased with storage time due to the fact that more crystalline structures were present. Starch retrogradation is mentioned previously in this paper. The enthalpy value for melting of starch crystals increased with storage time as well.[93]
What we didn’t like: This is a big and bulky unit, making it a difficult fit in small spaces. Without a drip tray, there is potential for mess. (However, because it's a flip model, you need less batter to fill up the iron, so drips are also less likely.) There was some unevenness in cooking, with the edges browning a touch faster than the rest. The deep wells and fixed plates make cleanup difficult.
For those who aren't happy with just wiping their waffle maker down to keep it clean, the Hamilton Beach 26030 Belgian Waffle Maker has removable non-stick plates and a drip tray that can all go straight into the dishwasher, and users say they come clean very nicely that way. This did the job, but it sure wasn't streamlined. Here is a photo from a World War II era training pamphlet. The subject was "How to use electrical appliances." Many rural households were just getting electricity due to the Rural Electrification Administration (REA) and the pamphlet was intended to get folks up to speed with the rest of the country. This photo shows the Government-approved method of "seasoning" a waffle iron (you put oil on it and let is burn in, creating the organic equivalent of Teflon). Any vegetable oil will do.
While the waffle iron heats up, use one of our electric mixers to prepare the batter, then pour it into a preheated waffle maker from our product lineup. Close the lid and allow the batter to cook. As your waffle cooks, it will release steam. Wait until the steam stops coming out before checking on the waffle for doneness. How long this takes depends on the model and setting you are using; it usually takes about 5 minutes. Do not peek while the waffle is cooking. If you lift the lid too early, you could rip the waffle apart![7]

Allow the waffle maker to cool completely before cleaning it. Wipe the plates down with a soft, damp cloth or paper towel. Brush any crumbs off with a soft kitchen brush. Use a rubber spatula to pick off any pieces of batter stuck to the plates. For really stubborn spots, cover them with cooking oil, wait 5 minutes, then wipe them away with a soft cloth.


Flemish waffles, or Gaufres à la Flamande, are a specialty of northern France and portions of western Belgium.[69] The original recipe, published in 1740 by Louis-Auguste de Bourbon in Le Cuisinier Gascon, is as follows: Take "deux litrons" (1.7 liters or 7 cups) of flour and mix it in a bowl with salt and one ounce of brewer's yeast barm. Incorporate "un livre" (490 grams or 1.1 pounds) of fresh butter, and let the batter rise. Once the batter has risen, take your heated iron, made expressly for these waffles, and wrap some butter in a cloth and rub both sides of the iron with it. When the iron is completely heated, make your waffles, but do so gently for fear of burning them. Cooked, take them out, put them on a platter, and serve them with both sugar and orange blossom water on top.[70]
The two sections of the waffle iron are held together with clamps that keep the sections from separating. Because the clamps form part of the trunion mount, there is never any danger that the section that is on the bottom will come open because its clamp part is bearing the weight in the mounting. The upper section may always be easily opened due to the "U" shaped trunion opening.

In the "Covered Mode", the chrome "Dome" is hinged to the base and can be lifted with the wooden handle. Food is placed on the grill and the cover is lowered. The cord is plugged into a receptacle shown in the previous photo. The receeptacle is ingenious in that it has two ways of plugging in the cord -- one only activates the inner heating coils ("LOW") while the other connects both the inner and outer coils ("HIGH"). This is the only temperature regulation available -- and the thing gets quite hot!
This arrangement is quite clever but contains a small design flaw -- the electrical plug is on the hinge side of the trunion mounting. It rotates 180 degrees and in doing so creates a flex in the cord; eventually, the cord will show mechanical failure at the flex-point as illustrated below. This "flaw" can be used in authenticating the cord that goes with the "Twin-O-Matic". However, safe operation requires an intact and properly insulated cord.
What’s more reassuring is when you sit down to tuck-in and the waffles are still crisp and warm. In my experience, a moderately warm oven can be helpful in maintaining ultimate crispness, but only in small batches. Large batches can end up unappetizingly rock-hard because they can overcook from the heat of the oven. A better approach to all of this is to toss the freshly made waffles— one at a time— back and forth between your hands. This essentially helps release any steam and allows for divine crispness. However, for another approach to this, I’ve some more tips.
