Most modern waffle makers run on electricity and can be adjusted to produce lighter or darker waffles. Many, but not all, have indicator lights and audible beeps to cue you through the preheating, battering and cooking stages. Even more important, the waffle maker should maintain consistent, even heat to make sure your waffle isn't overcooked on the outside and mushy on the inside, or cooked in some places but not in others.
What we liked: The Cuisinart waffle maker was the hottest of all the irons we tested, making waffles in just over three minutes. The waffles it produced were light and fluffy on the inside, with a delicate and crisp crust. They had deep divots for holding lots of syrup and butter, and a traditional round shape. Because the iron gets so hot, the adjustable temperature is actually a useful feature, unlike on most of the other waffle irons we tested.
I speak from experience: a few months ago, clear out of nowhere, I was struck by a need for homemade waffles. I had to have them—and because I live in New York City and expect immediate gratification, I proceeded directly to my local discount emporium and procured a plastic waffle iron—covered in a thin film of dust—for the sum of $16.99. Back home, I washed it and hastily set about mixing up a bowl of batter. Sadly, this story has a grim ending: even after the the requisite heating and greasing, pouring and griddling, the specimens that emerged from my iron were flabby and pale—hardly deserving of the name waffle and certainly a far cry from the feast of my dreamings.

Dear reader, when you mix all of the ingredients together for waffles, you’ll realize that things aren’t as smooth as silk. We’re not going for a cake batter here. The moment there’s no visible flour, you’re ready to go. Easy peasy! Mixing everything within an inch of its life to ensure a lump-free batter means you’ll likely end up with tough waffles.
We also tested the flip model from Hamilton Beach, the Hamilton Beach Flip Belgian Waffle Maker. It has a drip tray and removable plates for easy cleanup, and, although this unit is larger, the handle folds in for easier storage. Similar to the other Hamilton Beach model, though, this unit did not heat up well, which led to sticking and dense waffles.
Flip or stationary? Once you’ve chosen between Belgian or American-style waffles, the next step is to determine if you want the assistance of a flip mechanism. Without flipping over the irons, you’re relying on the rising agent in your batter (or just over-filling your waffle maker) to quickly and evenly fill the top plate. The flip mechanism ensures even distribution for more consistent waffles. They take up more space vertically, but in the storage position they’re actually pretty manageable.

The ones we definitely tend to avoid are the machines which claim to be able to make both great American and Belgian waffles. The old cliché “Jack of all trades, master of none” almost always holds true when it comes to models which supposedly are versatile enough to produce terrific waffles whether you prefer them thin or thick. The optimal construction of a waffle maker is very different for each type, and there’s no way a quality machine can do justice to both.

Maximilien Consael, another Ghent chef, had claimed to have invented the waffles in 1839, though there's no written record of him either naming or selling the waffles until his participation in the 1856 Brussels Fair.[65][66] Neither man created the recipe; they simply popularized and formalized an existing recipe as the Brussels waffle.[67]

The drip tray included with the BELLA waffle maker makes cleanup even easier. After cooking several dozen waffles, we still found very little that needed to be cleaned from the waffle maker itself once the drip tray was removed. In addition, the nonstick surface was effective — however, it didn’t particularly stand out compared to the rest of the field.

A stovetop waffle maker is essentially a hinged pair of cooking plates that fasten together. To cook waffles, you put the batter inside the waffle maker and put it on the stove, flipping it over to cook both sides. This was how people cooked waffles before electric waffle makers existed, and some people who grew up making them this way may prefer a stovetop model.
Hi Min, Thanks so much! I’m so sorry that things didn’t come out as planned. Unfortunately, it’s not that easy to replace regular flour with any gluten-free flour blend when it comes to certain recipes. I haven’t developed a gluten-free waffle recipe, so I can’t offer any suggestions of how to change this one. This one shared on Leite’s Culinaria from Shauna Ahern’s book, Gluten-Free Girl and the Chef, is a good place to start. A quick Google search for a gluten-free waffle recipe would also be your best bet.
When the temperature exceeds the desired setting, the strip "warps" and breaks the contact causing the resistance coils to cool. Because the iron is not being heated, the temperature falls and consequently the bimetallic strip "un-warps" and makes contact again, causing the coils to re-heat the iron. In this way, a continuous temperature is maintained in the cooking irons.

That said, quite a few users say that this waffle maker isn't as sturdily built as previous versions of the same model, and that if you don't get the top heating plate aligned just right, it can fall off -- an injury hazard if the plate is hot. The top of the G48TD also gets very hot. Some use pliers to bend the metal clips that hold the heating plates in place, which helps them line up better -- or you can just use an oven mitt to protect your hands.
