Liège waffles, the most popular contemporary Belgian waffle variety, are rumored to have been invented during the 18th century, as well, by the chef to the prince-bishop of Liège. However, there are no German, French, Dutch, or Belgian cookbooks that contain references to them in this period – by any name – nor are there any waffle recipes that mention the Liège waffle's distinctive ingredients, brioche-based dough and pearl sugar. It is not until 1814 that Antoine Beauvilliers publishes a recipe in l'Art du Cuisiner where brioche dough is introduced as the base of the waffle and sucre cassé (crushed block sugar) is used as a garnish for the waffles, though not worked into the dough. Antonin Carême, the famous Parisian pastry chef, is the first to incorporate gros sucre into several waffle variations named in his 1822 work, Le Maitre d'Hotel Français. Then, in 1834, Leblanc publishes a complete recipe for gaufres grêlées (hail waffles), where gros sucre is mixed in. A full Gaufre de Liège recipe does not appear until 1921.
When I was a kid, I was obsessed with Eggo waffles. I vaguely remember that when I was very young, my mother used to purchase square frozen waffles. But once our family was turned on to the round Eggo waffles, we never looked back. As soon as one popped out of the toaster, I would slather it in butter and maple syrup and then cut off the rounded edges and gobble it up.
Electric waffle irons are made of two plates similarly set into a hinged body, which is heated through electric coils housed in the unit behind the plates. Some of these electric waffle makers have basic plug-and-play designs, while others offer variable heat settings, timers, and indicator lights telling you when your waffle is ready. For this review, we looked only at electric waffle makers and excluded stovetop waffle irons, since success with the latter has more to do with the cook’s skill and the heat source than differences in design.
Before beginning these tests, I'd heard buzz that the All-Clad Belgian Waffle Iron was the Cadillac of waffle makers—a hulking, shiny, stainless steel behemoth capable of turning out batch after batch of five-star hotel-buffet-quality waffles. I was intrigued, but given that it came with a gulp-inducing price tag of $200, also very skeptical. Could the waffles it made really be five times better than those from its lower-priced competitors?
The Thermostat uses a bimetallic strip to break the circuit when the desired temperature is reached. This is a strip made up of two metals that have different thermal expansion characteristics, such as steel and copper. If one metal expands faster than the other, the strip will warp -- and the motion caused by this warping can do useful work (like breaking the circuit...) In this case, a cam exerts some force on the bimetallic strip using a spring force to keep the contact in place for varying amounts of temperature. For "high" settings, the bimetallic strip must warp a lot more to break the contact than for "low" settings.
A waffle maker isn't just a kitchen appliance—it's a wish-granter. You know the fantasy. Sunday. You awaken to the sweet scent of butter and freshly brewed coffee wafting through your home. Tiptoe to the kitchen: there's your honey at the counter and a stack of perfectly golden waffles, still steaming from the iron. You pile on the maple syrup, dig in, and then go back for more. You stay in your pajamas all day and pretend you run your own diner.
Two lights on the Krups machine, one red and one green, indicate when it is preheating or cooking (red) and when the machine or the waffle is ready (green). These indicators are bright and easy enough to read (unlike some machines, where it’s hard to tell if the weak light is on or off). But unlike our previous pick, the Proctor Silex 26016A, the Krups GQ502D also beeps loudly when it’s ready, which means you can focus on frying bacon without worrying about overcooking your waffles. While some other models we tested were hard to hear when they beeped, this one was loud enough that we could easily hear it from the next room, even with a radio on, but the sound is neither persistent nor so unpleasant that you won’t want to hear it first thing in the morning.
Sadly, those are the only nice things we have to say about the new Oster. Despite being rated for the same wattage and designed in nearly the same way (even the maximum warm-up temperature was basically identical to the old model when we checked with a K-type thermometer probe) this model does not cook satisfactory belgian waffles. We even sent the first machine we got back for a replacement, certain that it must be broken.
Moving into the 17th century, unsweetened or honey-sweetened waffles and oublies – often made of non-wheat grains – were the type generally accessible to the average citizen. The wheat-based and particularly the sugar-sweetened varieties, while present throughout Europe, were prohibitively expensive for all but the monarchy and bourgeoisie. Even for the Dutch, who controlled much of the mid-century sugar trade, a kilogram of sugar was worth ½ an ounce of silver (the equivalent of ~$7 for a 5 lb. bag, 01/2016 spot silver prices), while, elsewhere in Europe, it fetched twice the price of opium. The wealthier families' waffles, known often as mestiers, were, "...smaller, thinner and above all more delicate, being composed of egg yolks, sugar, and the finest of the finest flour, mixed in white wine. One serves them at the table like dessert pastry."
Essentially, waffles are a form of griddle-cake based on flour, milk, eggs, butter, oil and leavening that are cooked on both sides simultaneously in a mold that takes the form of a gridded surface. Because of the "teeth and gaps" of the waffle mold or "iron", considerably more of the surface area is heated and caramelized relative to the "pancake" -- thus, the waffle has more taste and a crispness that enables it to serve as a support for other foods. Waffles serve many of the same roles in sweets as toast serves in savories.
The technology of waffles is fourfoldfold: (1)the "iron" or mold in which the waffle is cooked; (2)the method of heating the iron; (3) the method of regulating temperature in the iron; and (4) the recipe for the waffle batter.
