Gofri (singular gofre) are waffles in Italy and can be found in the Piedmontese cuisine: they are light and crispy in texture, contain no egg or milk (according to the most ancient recipe)[84] and come both in sweet and savory versions.[85] Central Italian cuisine also features waffle-like cookies, which are locally known as pizzelle, ferratelle (in Abruzzo) or cancelle (in Molise). 

The Cuisinart Vertical Waffle Maker (WAF-V100) seems clever at first: It stands upright, and you pour batter into a spout at the top. But Amazon customers complain that the spout clogs easily, and that it’s too small to allow add-ins such as blueberries or chocolate chips. Plus, this model won’t work at all if you want to waffle anything else, like grilled cheese or hash browns.

Unless you lead a life of leisure (or run a bed and breakfast) chances are your waffle iron is not going to be a daily-use appliance, so ideally you shouldn't have to allocate much of your kitchen real estate to store it. Since most waffle irons are pretty bulky, we paid special attention to the design—does the size of the machine make sense? Is the space well-used? Does it feel solidly built? Does seem like it will hold up well to cleaning and other wear and tear?
Though some have speculated that waffle irons first appeared in the 13th–14th centuries, it was not until the 15th century that a true physical distinction between the oublie and the waffle began to evolve.[8] Notably, while a recipe like the fourth in Le Ménagier de Paris was only flour, salt and wine – indistinguishable from common oublie recipes of the time – what did emerge was a new shape to many of the irons being produced. Not only were the newly fashioned ones rectangular, taking the form of the fer à hosties, but some circular oublie irons were cut down to create rectangles.[8] It was also in this period that the waffle's classic grid motif appeared clearly in a French fer à oublie and a Belgian wafelijzer – albeit in a more shallowly engraved fashion – setting the stage for the more deeply gridded irons that were about to become commonplace throughout Belgium.[19][20] 

What we liked: This large and affordable unit makes four waffles at a time. The square waffles produced by this model don’t feature wells as deep as those of the Cuisinart or All-Clad, but they are chewy and tender, with crispy edges and peaks. The removable, dishwasher-safe plates are our favorite feature, as deeper-welled Belgian-waffle makers can be difficult to clean. This waffle iron is particularly worth considering if you typically use a store-bought waffle mix, which is less sensitive to inconsistent heating than homemade batter. The cord storage and locking handles make the Krups simple to store, even with its large capacity.

What we liked: This compact and lightweight model from Black+Decker is a great multitasker for any small kitchen. It makes thin waffles with shallow wells, crispy on the outside and slightly chewy on the inside. On average, it makes waffles in about eight minutes—longer than ideal, but still respectable compared with other affordable options. The large surface makes four square four-inch waffles at a time, but it still has a low profile, making it a good fit in tight spaces. The plates on this unit are reversible, revealing a flat griddle, which opens up into a large cooking surface for eggs and pancakes and can accommodate large sandwiches with its adjustable hinge. The plates are removable and dishwasher-safe.

There's no easy way to say this: the real revelation of this test was just how mediocre most waffle irons are. But at least they were consistent in the ways in which they were mediocre! Far and away, the most common problem was one of uneven cooking, or what I like to call the "two-face" effect: waffles that emerged from the iron evenly browned on one side but pale and doughy on the other. It is not a good look.
Close the lid and allow the batter to cook. As your waffle cooks, it will release steam. Wait until the steam stops coming out before checking on the waffle for doneness. How long this takes depends on the model and setting you are using; it usually takes about 5 minutes. Do not peek while the waffle is cooking. If you lift the lid too early, you could rip the waffle apart![7]
A stovetop waffle maker is essentially a hinged pair of cooking plates that fasten together. To cook waffles, you put the batter inside the waffle maker and put it on the stove, flipping it over to cook both sides. I really would like to give this place better reviews,  but the service is SO BAD. I came twice, once during lunch and again during breakfast (but early, so it wasn't even crowded). Both times I sat outside, and both times the service was inexcusably bad. At breakfast, my husband never got a refill on his coffee. Both times I sat for so long that I wasn't sure if I was supposed to get up to place my order at the counter (I wasn't).

I have never tried to freeze them, but if you ahve frozen other waffles before I imagine these would freeze just as well. If you swapped over to Almond Flour you would need to use 1 & 1/2 Cups of Almond Flour. Almond FLour would give you 1-2 more net carbs per waffle roughly.

After testing both styles with different batters to see if this was truly a useful feature, we found that our three high-end picks cooked all the batters on the top and the bottom evenly. This is an excellent waffle maker. Seems to be well made and can turn out a golen, fluffy waffle in about 2-3 minutes. The only reason I do not give it a 5 star review, is that it has a chime that it makes when it reaches its target temperature. This is not a calm, friendly jingle. This temperature chime is loud and jarring. I thought that I had set off the smoke alarm the first time I used it. This chime is 4 long beeps and it will make this chime every time you make a new waffle. I do realize that this is to indicate when the waffle is finished without having to lift the lid. I will be taking it apart soon to see if i can disable the "banshee shriek" function. Despite this loud wailing, this is an excellent product for the production of breakfast pastries.

Today there are many (many!) Belgian waffle makers on the market. We set out to find the best one by making hundreds of waffles and by going the extra waffle-making mile by consulting a postdoc in MIT’s mechanical engineering program to learn the basic thermodynamic principles at work in waffle irons. After a month of waffles for breakfast and for lunch, we had a solid winner—an iron that made picture-perfect Belgian waffles, two at a time, in under 5 minutes. 

American-style waffle irons are used to make traditional waffles, which are thin and crispy with relatively shallow pockets. This means they cook fairly quickly, too. The savory batter used for this type of waffle makes it particularly well-suited to making special shapes like hearts, or for use in place of bread for things like breakfast sandwiches. 

We considered looking at dual-purpose waffle makers with interchangeable plates such as the T-fal EZ Clean Sandwich and Waffle Maker (SW6100) but ultimately passed. What’s more reassuring is when you sit down to tuck-in and the waffles are still crisp and warm. In my experience, a moderately warm oven can be helpful in maintaining ultimate crispness, but only in small batches. Large batches can end up unappetizingly rock-hard because they can overcook from the heat of the oven. A better approach to all of this is to toss the freshly made waffles— one at a time— back and forth between your hands. This essentially helps release any steam and allows for divine crispness. However, for another approach to this, I’ve some more tips.
Optional: If you want your waffles a little crispy you can add some extra oil to this batter too. Additionally, you can experiment with adding different flavoring extracts or spices to the mix to make them taste the way you like. Sometimes we add pumpkin spice mix for a seasonal flavor, other times we may add Pecans or Lily’s Dark Chocolate Chips for some variety too.

What we liked: The Cuisinart waffle maker was the hottest of all the irons we tested, making waffles in just over three minutes. The waffles it produced were light and fluffy on the inside, with a delicate and crisp crust. They had deep divots for holding lots of syrup and butter, and a traditional round shape. Because the iron gets so hot, the adjustable temperature is actually a useful feature, unlike on most of the other waffle irons we tested.

In the late 14th century, the first known waffle recipe was penned in an anonymous manuscript, Le Ménagier de Paris, written by a husband as a set of instructions to his young wife.[16] While it technically contains four recipes, all are a variation of the first: Beat some eggs in a bowl, season with salt and add wine. Toss in some flour, and mix. Then fill, little by little, two irons at a time with as much of the paste as a slice of cheese is large. Then close the iron and cook both sides. If the dough does not detach easily from the iron, coat it first with a piece of cloth that has been soaked in oil or grease.[17] The other three variations explain how cheese is to be placed in between two layers of batter, grated and mixed in to the batter, or left out, along with the eggs.[18] However, this was a waffle / gaufre in name only, as the recipe contained no leavening.
Our final round of waffles was made out of Aunt Jemima waffle mix, prepared according to the package’s instructions. These waffles use a combination of chemical leavening and steam from the added liquid to result in the rise of the waffles. The waffles made with this batter were consistently dense and cake-like in all the waffle makers, but the color came out evenly brown in all machines. Where we found variations was in the crispness of the crusts, with machines that were hotter yielding thinner and crispier crusts. With this batter, we also found no differences between flip and non-flip units. If you make waffles mostly with a boxed mix, you can definitely get away with using a cheaper iron, since the differences were closer to minimal.
However, we found the absolute best value to come from the BELLA – 13591 Classic Rotating Belgian Waffle Maker. Cool breakfast spot. Not sure why so much hype but a friend wanted me to go with him because he likes it a lot. I had a waffle breakfast with turkey sausage, eggs, hash browns and half a waffle. The waffle was a bit crispy for my liking. I would go back and try the hash waffle. I was worried because I didn't know if it would be dry. I think next time I would just ask for the waffle to not be cooked so long. The waffle wasn't bad but wasn't something to brag about however the turkey sausage, eggs and hash browns were seasoned prettty well. I went on a Sunday afternoon; it was about a 20-25 minute wait.

Most modern waffle makers run on electricity and can be adjusted to produce lighter or darker waffles. Many, but not all, have indicator lights and audible beeps to cue you through the preheating, battering and cooking stages. Even more important, the waffle maker should maintain consistent, even heat to make sure your waffle isn't overcooked on the outside and mushy on the inside, or cooked in some places but not in others.
