Electric waffle irons are available in flip and stationary models. Proponents of flip waffle makers suggest that they heat more evenly by better distributing the batter throughout the plates. After testing both styles with different batters to see if this was truly a useful feature, we found that our three high-end picks cooked all the batters on the top and the bottom evenly. There was no difference between our flip model and a high-end stationary model. We did, however, find the flip a useful function when comparing lower-end models cooking the thinner buttermilk batter. Ultimately, we didn't pick any low-end flip models because, although they may have heated more evenly than our budget picks, they cooked the batter so slowly that the waffles ended up too dense and heavy.


Preheat the waffle iron. Sift the dry indredients into a medium sized bowl. Separate the eggs, putting the egg whites in smaller bowl. Beat the egg whites until they are stiff. (If you are using an electric mixer, you can beat the egg whites first, then beat the batter without having to wash the beaters. The reverse is not true. If you beat the batter first and you have to wash the beaters before beating the egg whites.) Add the egg yokes, oil and milk all at one time to the dry indredients. Beat until there are no lumps in the batter. Fold the egg whites into the other batter using a spatula or other flat utinsel. Put a full 1/2 cup of batter in your waffle iron to make a 9-inch round waffle. This recipe makes about eight 9 inch waffles. Adjust the quantity by volume if you have an older waffle iron that maxed 4 or 6 inch waffles.
Although stovetop waffle makers are a little harder to use than electric because you have to regulate the waffle iron's temperature and cooking time, they're also more versatile. They can be used for tailgating, camping trips, or during a power outage (if you have a gas stove). Stovetop waffle irons are usually much smaller and thinner than countertop models, too; so they're the ideal choice for small kitchens with limited storage, camping or tailgating, off-the-grid living, or anyone who enjoys the challenge of learning to create the perfect waffle by hand.
For this guide, we interviewed Daniel Shumski, author of the blog and cookbook Will It Waffle?; J. Kenji López-Alt, culinary director of Serious Eats; Tim Kemp, culinary manager of home cooking delivery service Blue Apron; and Matt Maichel, the ex-chef/owner of the catering company Waffle Which Way. Between them, they have made many thousands of waffles and other waffled items over the years and have used upward of a dozen waffle makers.
Criteria for what makes an ideal waffle are somewhat subjective: I happen to like mine crunchy on the outside but fluffy in the center, but maybe you like yours golden and crispy? Still, some technical standards are pretty universally accepted, and those were what we focused on during our test. A good waffle iron should heat evenly and cook batter consistently from top to bottom and side to side without burnt spots or raw patches. It should allow enough steam to escape during the cooking process as to produce waffles that are structurally firm and not soggy. It should also be reliable, repeating the same results batch after batch, and easy to clean.

This one shared on Leite’s Culinaria from Shauna Ahern’s book, Gluten-Free Girl and the Chef, is a good place to start. A quick Google search for a gluten-free waffle recipe would also be your best bet.

Beyond that, we liked the very compact size (perfect for tiny apartment dwellers!) and modest price of the Hamilton Beach 2-Slice Belgian Waffle Maker. As usual, we were won over by the solid body and smartly designed drip-catching "moat" on the Breville No-Mess Waffle Maker, but at $128 we felt the imperfect performance couldn't justify the considerable price. While the Oster and Cuisinart were the two top waffle makers among our finalists in initial testing, there are four other strong choices as well. Ultimately, we went with the two that stood out during testing. Doreen— your comment made my week! Thank you so much for your amazing words of encouragement. Also, I’m so thrilled your family enjoyed these! I love that you added more vanilla; I usually don’t skimp, but these are just a good base to start off with for most things. A little more vanilla, almond extract (or a combo), or anything other flavorings would be fab here. As for the cookbook suggestion and the crepes; great suggestions. I’ll be sure to keep them in mind for the upcoming nom casts!

I've made this recipe dozens of times and they've turned out excellent! Great consistency, crispy on the outside, soft and fluffy on the inside. Not greasy at all. However, it is true that they are very sweet, but I reduce the amount of sugar to around 1/2 cup on days where I'm not feeling like overly sweet stuff. I highly recommend using salted butter for the batter and for oiling the waffle iron. If you follow the recipe to the T, then avoid using sweet toppings. Use things like sour raspberries or strawberries with whipped cream that isnt too sweet along with a glass of orange juice or something. or just eat it alone.
There's no easy way to say this: the real revelation of this test was just how mediocre most waffle irons are. But at least they were consistent in the ways in which they were mediocre! Far and away, the most common problem was one of uneven cooking, or what I like to call the "two-face" effect: waffles that emerged from the iron evenly browned on one side but pale and doughy on the other. It is not a good look.
